Today I made these healthy muffins and they were scrumptious.
This is the first time I have baked with coconut oil and gluten-free flour.
To make these:
1 1/4 cup gluten-free flour
1/4 cup cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup maple syrup
1 mashed banana or 1/3 cup appleasuce
1/4 cup coconut oil
1 cup grated zucchini
1. Preheat the oven to 350 degrees and grease a muffin pan.
2. Sift the dry ingredients into a small bowl.
3. In a large bowl, mix the wet ingredients together and then add the dry ingredients. Stir together to combine, and then fold in the zucchini.
4. Bake the muffins for 20-25 minutes.
5. Cool on a wire rack.
