Oh boy! This can feed a crowd or do double duty dinners.
We had it last night and look forward to having it again tonight.
It’s fairly easy to make…
Take one small sweet onion and finely chop it.
Then sauté it in a little bit of olive oil and add 2 pounds of lean beef to it. Cook until brown and then drain off the fat. Add a large can of Hunts crushed tomatoes, some salt, pepper and Worcestershire sauce to taste. Let is simmer.
Meanwhile, boil 8 Yukon potatoes (or gold if Yukon aren’t in season). Mash them up with an electric mixer and add milk, butter and seasoned salt to taste.
Next your going to layer the meat, then peas ( I use 3 cans of Le Sueur peas) and finally the mashed potatoes. Sprinkle with more seasoned salt and put in the oven for 40 minutes on 350 degrees.
I’m getting hungry just typing this : )
