So the other morning my son wanted pancakes and we didn’t have any Hungry Jack mix.
So I made them from scratch but beware: Now he wants them every time this way.
I used almond milk instead of non-fat milk which is why they appear darker.
We were out of non-fat milk too : )
Here’s the basic recipe:
1 1/2 cups all purpose flour
2 T. sugar
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 1/4 – 1 1/2 cup milk
1 t. vanilla
2 T. vegetable oil
Of course there are specific directions and then what I do at 6:30 am.
– throw it all in a bowl and mix it up while remaining half asleep standing up in my kitchen!
