We had a great deal of spaghetti squash left over the other night so my daughter found this recipe and we really loved it.
You can use chicken or shrimp or both.
1 spaghetti squash
2 T. extra-virgin olive oil
2 garlic cloves, crushed
1/2 tsp. red pepper flakes
1/4 tsp ground garlic
2 handfuls of spinach leaves
grape tomatoes -ours were from my neighbors garden and tasted amazing 🙂
1/2 onion chopped
We roasted our spaghetti squash in the oven on 375 for 50 minutes. Don’t forget to cut it in half and scrape the seeds out.
Then grill your shrimp or chicken or both!
Meanwhile, in a medium pot add oil, garlic and the onion. Sauté for 4 minutes.
Add in the spaghetti squash and mix well.
Then add the tomatoes and shrimp or whatever protein and veggies you like. You can get creative.
Garnish with fresh basil and parmesan. Salt and pepper to taste.
