Don’t let the name scare you!
These taste just like the cookie dough you and I grew up eating.
The difference is these aren’t going to give you salmonella.
These are also gluten-free and soy-free.
They freeze wonderfully so I would recommend making a double batch for those late night cravings.
Also, this recipe only makes about 12 small balls.
2/3 cup raw cashews
1/3 cup oats
2 Tbsp. Agave
1 Tbsp. maple syrup
1 tsp. vanilla extract
1/4 cup chocolate chips
Blend the cashews and oats in a vita-Mix or food processor until it’s a fine powder.
If you over blend you will end up with cashew butter very quickly.
Add the agave, maple and vanilla.
Just blend in short bursts.
Stir in the chocolate chips by hand.
Form into balls and serve.
If dough is sticky chill in the fridge a bit.
These are so good.
We ate them all but are making more to freeze today.
